Since we are doing our end-of-the-month dinner scrounging this week (food allergy budgets are tight!), I thought I’d whip up our favorite vegetable soup with leftover steak, beef broth, and some frozen veggies.
This soup is also especially great for feeding guests. Throw ingredients in the crock pot for Halloween, Super Bowl, etc. Serve with some homemade bread, and you’re set!
I make our own beef broth similarly to way I make chicken broth, but I use beef bones instead. Or Swanson’s beef broth has been dairy-free in the past, check labels to make sure.
