I am super happy to be home after traveling in the worst snow storm that we’ve had in a decade, and have declared it low-key recovery week around here. Time to cozy up and enjoy heat and blankets. It’s also the perfect time to eat hot soup.
I wanted to share a good broccoli soup recipe that we enjoy. I like this one because:
1. It calls for no flour thickening, so it reheats well.
2. It calls for no cheese although it can be added to individual bowls.
3. It’s a great recipe for consuming healthy, delicious homemade chicken broth.
DAIRY-FREE CREAM OF BROCCOLI SOUP
1 chopped onion
1 diced carrot
1 clove garlic
3 cups chicken broth
4 cups chopped broccoli
2 cups dairy-free milk
1/2 teaspoon salt
1 pinch ground black pepper
