Simple, moist, versatile…this banana bread recipe does not disappoint.
This recipe is especially nice because it doesn’t even call for milk. So save your dairy-free milk for something else. 😉 And it just requires one egg which is easily substituted with 3 tablespoons of applesauce without messing it up. If you can do the egg, go for it.
Although it doesn’t need it, you can also spice this banana bread up by adding dairy-free chocolate chips, nuts, or sprinkling brown sugar on the top before baking. You can always leave it as is, too. I promise it will be gobbled up no matter what.
We have also used this recipe as the base for other quick breads.
Now gather up those brown bananas and turn them into something delicious!
DAIRY-FREE, EGG-FREE BANANA BREAD
1.5 c. all purpose flour
1.5 ts baking powder
1/4 ts baking soda
1/4 ts ground cinnamon
1/8 ts salt
1 egg (3 Tb applesauce)
1 c. mashed bananas (3 medium…although I’ve often used just 2)
3/4 c. sugar
1/4 c. cooking oil
Grease loaf pan. Mix first set of dry ingredients. Make well in center. In another bowl, mix second set of ingredients. Add wet mixture to dry mixture. Stir just until moistened. Spoon into pan. Bake 40-50 minutes or until wooden toothpick comes out clean. Cool on wire rack.
Enjoy this warm or store it in an airtight container once it’s cooled. The flavors will meld better for second-day consumption but who can really wait that long? 😉
