When your neighbor asks for a recipe that her daughter came home raving about, you know you have a winner.
One day I dished these granola bites out to all the neighbor kids, and they were completely devoured. I’m so glad they wanted more at home!
The kids certainly didn’t realize how nutritious these are or that they are actually allergy-friendly.
Easy, delicious, and no-bake. And kids can help make them!
These work wonderfully for a quick breakfast or a snack during the day.
DAIRY-FREE GRANOLA BITES
1 cup quick oats (gluten-free if needed)
1/2 cup peanut butter (nut or seed butter if needed)
1/2 cup honey
1 cup rice crispie cereal (gluten-free if needed)
1/4 cup ground flaxseed
1/2 cup shredded coconut
1/2 cup mini chocolate chips
1 tsp vanilla
Mix everything above in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into balls. I use my melon baller to just scoop out little balls. If the scoop starts sticking, wet it under water and keep scooping.
If the bites aren’t sticking together well enough, add more honey one teaspoon at a time until they do.
Store in an airtight container and keep refrigerated for up to one week.
