Here is yet another another great dish to make with leftover roasted chicken, and our kids really like it. Dairy-free quesadillas are made possible with dairy-free cheese shreds like Daiya and GO Veggie VEGAN variety. We use both.
Just place a tortilla in your skillet or on a griddle, top with cooked diced or shredded chicken, sauteed spinach, and dairy-free cheese shreds. Place another tortilla on top and cook on both sides until tortillas are golden brown crispy and the inside is heated through.
Serve with salsa and perhaps a side of rice or corn.
