These cookies are one of the first things I made when Graham outgrew his oat allergy. I had been aching to share this childhood favorite with them, and I was so glad the day had finally come. Needless to say, my kids love them as much as I do.
No-bake cookies are wonderful in so many ways. One, they don’t require expensive dairy-free chocolate, just cocoa powder. Two, they are quick, easy and affordable to make in large batches. Three, guests who aren’t even allergy-free like them. And four, these don’t require baking or heating up your house. A perfect potluck treat! Heck, even let your kids help. It’s so fun to watch the cookies “magically bake” on the counter.
You can make these peanut-free by using your favorite nut or seed butter. Bonus!
DAIRY-FREE NO BAKE COOKIES
1/2 cup dairy-free butter (Earth Balance)
2 cups sugar
1/2 cup dairy-free milk
4 tablespoons cocoa
1/2 cup creamy Sunbutter (peanut butter is an option for those not allergic)
2 teaspoons vanilla
3 -3 1/2 cups dry quick-cooking oats (gluten-free is an option)
