Easy & Healthy Vegetable Soup Dairy-Free


Since we are doing our end-of-the-month dinner scrounging this week (food allergy budgets are tight),

I thought I’d whip up our favorite vegetable soup with leftover steak, beef broth, and some frozen veggies.

This soup is also especially great for feeding guests, too, because it’s already dairy and egg free.

They won’t even know it’s allergy-friendly. 

Simply throw ingredients in the crock pot for Halloween, Super Bowl, etc.

Serve with some homemade bread,

or offer up some soup crackers

and you’re set!

I make our own beef broth similarly to way I make chicken broth,

but I use beef bones instead.

Or Swanson beef broth has been dairy-free in the past, check labels to make sure.

I’ve also used chicken broth for this recipe if it’s all I have on hand. 

No shame in my game, folks. 

Speaking of no shame, I love using frozen vegetables in this soup because it’s so easy. 

But if you have fresh vegetables on hand, feel free to use those, of course.


Easy Veggie Soup Allergy-Friendly



4 cups of beef or chicken broth
1 small can of tomato sauce
1 14.5 ounce can of diced tomatoes
1 pound cooked ground beef, diced steak, or stew meat
1 bag mixed frozen vegetables
4-5 peeled, washed, diced potatoes
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
salt to taste


Combine ingredients into a large pot on the stove or a slow cooker, make sure the meat is cooked first. 

Simmer on medium heat until hot and potatoes are cooked through. 

Let simmer longer to let flavors meld together. 

Serve hot. 

Store leftovers in the refrigerator. 

The next day, the flavor will be even better!

I've gotten to where I just make my own broth from chicken bones and then freeze it.

Thanks for letting me know what you use, though. That will be very helpful if I need something in a pinch! :)

Oh, also... you asked about paint. I used WASHABLE tempura paint. I got it at Hobby Lobby. It was the first time we had used it. I don't know much about paints as I usually tend to stray away from paint. LOL!

ah yes. the mystery breakouts. we have those often. it is really confusing. my allergist wonders if there is some sort of mold or something that affects my son. we just had a wierd thing happen again in the allergy world.. here is my blog: mouseymom.blogspot.com
