So here’s the deal. When we make whipped cream from canned coconut milk, we are always left with the runny part of the coconut milk. And I actually used to just toss it out (gasp!). Thank God I’ve come to my senses, and found that the liquid has a very yummy usefulness.
Pssssst, in case you didn’t know, the coconut water tastes amazing in strawberry smoothies! And I had to share in case you, too, are throwing out this poor overlooked ingredient. Let’s give coconut water some glory! Here’s our recipe.
STRAWBERRY COCONUT SMOOTHIE
1 Cup Canned Coconut Milk (watery part, cold) (affiliate)
1 Cup Frozen Strawberries
1/2 Cup Ice Cubes
Splash of Vanilla
Honey (to taste)
Blend in a high power blender and enjoy. This could also be frozen into delicious healthy popsicles!
