So here’s the deal.
When we make whipped cream from canned coconut milk,
we are always left with the runny part of the coconut milk.
And I actually used to just toss it out, gasp!
What a waste.
Thank goodness I’ve come to my senses and found this liquid has a very tasty usefulness.

STRAWBERRY COCONUT SMOOTHIE DAIRY FREE
1 cup canned coconut milk (watery part, cold) (affiliate)
1 cup frozen strawberries
1/2 cup ice cubes
splash of vanilla
honey to taste
Blend all ingredients in a high power blender.
This could also be frozen into delicious healthy popsicles!
