Just wanted to share another quick dinner we enjoy at our house,
shredded barbecue chicken from our weekly leftover roasted chicken.
That’s right, it’s a leftover meal!
Only takes about 15 minutes to heat up if you have cooked chicken on hand.
Not really a favorite of mine, I’d rather make chicken salad with leftover chicken.
But my boys gobble this up big time!
The barbecue sauce we use is Sweet Baby Ray’s, and I can even pick it up at Aldi.
I also know dairy-free buns can be hard to find, but they are out there if you look.
Don’t hesitate to serve barbecue shredded chicken on your favorite dairy-free sandwich bread in a pinch.
My kids eat it that way all the time.
Just be sure to check labels for yourself, of course. Ingredients can change.
To make these sandwiches, just shred up leftover chicken, add the barbecue sauce, and heat through on the stove or in a crock pot.
Or even use the microwave.
Easy as that.
You can actually do this with leftover turkey and roast beef as well.
Serve with a side of chips and a pickle.
Or leftover roasted veggies from the night before, lol.
Your kids will feel like they just sat down at a restaurant, and bellies will be full and happy.
