One day I dished these allergy-friendly granola bites out to all the neighbor kids, and they were completely devoured. High fives for normal-tasting food that’s allergy-safe and fun for our friends!
In fact, one of the moms down the street called me for the recipe. Her daughter came home and wanted to make some more.
Easy, delicious, and no-bake. Kids can make them!
These work wonderfully for a quick breakfast or a snack during the day.

DAIRY-FREE GRANOLA BITES
1 cup quick oats (gluten-free if needed)
1/2 cup peanut butter (nut or seed butter if needed)
1/2 cup honey
1 cup rice crispy cereal (gluten-free if needed)
1/4 cup ground flaxseed
1/2 cup shredded coconut (affiliate)
1/2 cup mini chocolate chips (affiliate)
1 tsp vanilla (affiliate)
Mix everything above in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into balls. I use my melon baller (affiliate) to just scoop out little balls. If the scoop starts sticking, wet it under water and keep scooping.
If the bites aren’t sticking together well enough, add more honey one teaspoon at a time until they do.
Store in an airtight container and keep refrigerated for up to one week.
