Oh friend, where should I start.
It was a cold blustery day in February.
My birthday, actually.
And the fam wanted to know what I wanted for birthday cake.
I don’t even love cake.
Seriously, I told them coffee and chocolate would suffice.
No need to slave in the kitchen for my birthday.
I remembered…from years and years ago…
a friend making the most amazing red velvet cake topped with coffee mocha frosting.

And I remembered right where the recipe card was tucked away these past 20 years.
Pulling it out, I exclaimed to hubby that indeed I now did want birthday cake this year.
Dairy-free, egg-free, nut-free, vegan chocolate cake…our usual.
But with a special twist!
Friend Jennifer’s coffee mocha frosting, please.
I couldn’t wait to taste it again after two long decades!
I suppose we haven’t made it all these years because of kids not needing coffee.
But hey! Teenagers!
Coffee is fair game now, right?!
If I had realized what I was missing all this time, though…
I think decaf would have been fine, lol.
my teen boys say this is our best frosting recipe now.
Woohoo! Guess we’ll be having it again soon.

Hubby made extra, and I ate it all myself…off the spoon.

Birthday girl dibs.
I told you I wanted coffee and chocolate for my birthday!
I just didn’t realize I’d be eating both off a spoon in the way of creamy, addictive frosting.
Life is good.
Now the frosting is a tad on the wet side.
We tried to remedy that as much as possible without losing the delicious coffee flavor. 🙂
So that’s why we refrigerate it an hour before frosting a cake.
But as you can see, with that tip, it should even pipe well. Yum!
Ready for a simple, easy recipe?!
COFFEE MOCHA FROSTING
4 cups powdered sugar
1 stick of soft dairy-free butter
3 tablespoons cocoa powder
6 tablespoons cold coffee
1 teaspoon vanilla
Mix all the ingredients together with an electric mixer until smooth.
Refrigerate frosting for about an hour before spreading onto chocolate cake.
