Apple Salad Dairy-Free
Dairy-free apple salad is so easy and the kids love it.
Packed with crunchy apples, sweet grapes, plump raisins...
and celery chopped so fine that nobody notices. See recipe below!
My family has always loved fruit salad at dinner.
We don't do it all the time, but we do when there's fruit on hand that needs used up.
And another fun way to mix up the fruit salad idea is to make old fashioned apple salad.
You know, like your mom used to make.
For the longest time, I didn't attempt this with milk, egg, and nut allergies.
But alas, it can be made free of all three allergens so don't let those hold you back.
Nut-free, with no nuts needed. Finely diced celery gives this salad the crunch it needs. If you can have nuts, just add them in! Walnuts or pecans would be fab.
Egg-free when you use your favorite vegan mayonnaise. Thank goodness we have plenty to choose from now.
Milk-free when you use dairy-free whipped cream. Again, this was the big game-changer for our family.
Here's our favorite dairy-free whipped cream or you can make homemade coconut whip.
I also LOVE these natural marshmallows in apple salad. There IS such thing as quality marshmallows.
To get our celery fiiiiiiiinely chopped so the kids don't complain, I use my new Pampered Chef Chopper. Or you can finely chop by hand with a chef's knife.
Here's how we make allergy-friendly apple salad.
Sweet, tangy, and kid-approved.
APPLE SALAD DAIRY FREE
Serves 4
INGREDIENTS
2 cups chopped apples
½ lemon juiced
¼ cup finely chopped celery
¼ cup plumped raisins
¼ cup halved grapes (optional)
1 cup marshmallows
1 cup dairy-free whipped cream
2 tablespoons vegan mayo
DIRECTIONS
Plump raisins by putting them in a bowl and covering them in boiling water for 10 minutes.
Juice ½ a lemon and pour into a large bowl.
Chop two cups of apples, about 2 large apples.
Toss apples in the lemon juice until fully coated.
Chop celery and add to the apples.
Drain water off raisins and add to the apples.
Drain any extra lemon juice from the apples.
In a separate bowl, gently fold together the dairy-free whip cream and mayo.
Fold whip and mayo dressing into the apple salad and mix well.
Cover salad bowl with plastic wrap and chill in the refrigerator 15-30 minutes.
Toss marshmallows into the salad right before serving, covering in dressing.
LEFTOVER APPLE SALAD
This recipe only serves four so we never have leftovers.
But I often triple or quadruple this recipe for family potlucks.
In that case, leftovers kept in the refrigerator will last through the next day ok.
Leftover apple salad works best when you choose very crunchy apples that won't be soggy the next day.
However, marshmallows do get soggy. So feel free to freshen up your leftover salad with fresh new marshmallows stirred in.
Hope you enjoy this dairy-free apple salad as much as we do!
