Oh friend, where should I start.
It was a cold blustery day in February.
My birthday, actually.
And the fam wanted to know what I wanted for birthday cake.
I don’t even love cake.
Seriously, I told them coffee and chocolate would suffice.
No need to slave in the kitchen for my birthday.
But THEN! I remembered from years and years ago…
a friend making the most amazing red velvet cake topped with coffee mocha frosting.

And I remembered right where the recipe card was tucked away these past 20 years.
Pulling it out, I exclaimed to hubby that indeed I now did want birthday cake this year.
Dairy-free, egg-free, nut-free, vegan chocolate cake…our usual.
But with a special twist!
Friend Jennifer’s coffee mocha frosting, please.
I couldn’t wait to taste it again after two long decades!
I suppose we haven’t made it all these years because of kids not needing coffee.
But hey, teenagers!
Coffee is fair game now, right?!
If I had realized what I was missing all this time, though…
I think decaf definitely would have been fine, lol.
Get this…my teen boys actually say this is our best frosting recipe now.

I told you I wanted coffee and chocolate for my birthday!
I just didn’t realize I’d be eating both off a spoon in the way of creamy, addictive frosting.
Ready for a simple, easy recipe?!
COFFEE MOCHA FROSTING
This goes great with our dairy-free and egg-free chocolate cake!
4 cups powdered sugar
1 stick of chilled dairy-free butter
3 tablespoons cocoa powder
1 teaspoon vanilla
4-6 tablespoons of cold coffee
Mix the first 4 ingredients together with an electric mixer until smooth.
Add the strong cold coffee 1 tablespoon at a time, 4-6 tablespoons, until you reach desired consistency.
Beat the frosting for a couple more minutes for a nice, whipped texture.
Spread on your chocolate cake.
