Pumpkin Maple Cold Brew Latte

Admittedly, I'm not a huge pumpkin spice latte (PSL) fan.
But! The pumpkin cream cold brew drink at Starbucks is another story!
I honestly love any cold brew coffee drink...
which is why I've come up with so many cold brew coffee recipes to make at home.
Hubby likes it when I stay out of the expensive coffee drive through. Ha!
So in the fall, when I'm busy baking all the pumpkin goodies,
I like to save back a tablespoon or two of pumpkin puree for my own little pumpkin cold brew at home.

WHY MAKE HOMEMADE COLD BREW COFFEE DRINKS
There are many good reasons to make your own cold brew lattes at home:
- No espresso machine needed
- You can make decaf lattes
- Save a lot of calories
- Don't have to leave home
- You save money, of course!
WHAT MILK IN DAIRY-FREE LATTES
For my dairy-free pumpkin cold brew, I use coconut milk.
Sometimes I even use unsweetened flax milk, in plain or vanilla, which you can't get at coffee shops!
It usually have 5 grams of protein per 8 ounces.
But if you prefer, you can use almond, oat, pea, hemp, or soy milk.
Dairy-free milk options are nearly endless these days.
DAIRY-FREE COLD FOAM
Call me lazy, but the best way I've found to enjoy dairy-free cold foam at home is to just use dairy-free whipped cream.
I find it made as almond-based or coconut-based. Coconut is my favorite.
Two brands I easily find are ReddiWip and Aldi Spray Whip.
If you want the spray whip to be more like cold foam, just whiz some in a measuring cup with a handheld frother before pouring it on top of your cold brew. That will thin out the whipped cream and make it foamy.
Dairy-free cold foam is also now on the market, in oat-based spray.
Always keep your eye out for dairy-free spray whips and cold foams. You never know what new thing you'll find!

We like to make our own cold brew coffee at home, using coffee beans we buy in bulk with our Sam's Club staples.
Then we grind the beans for cold making cold brew, as we need them.
As a shortcut, you can always buy bottles of cold brew coffee concentrate already made.
Now here's the pumpkin latte recipe!
PUMPKIN MAPLE COLD BREW LATTE
Here's our cold brew coffee concentrate recipe that you'll need to make 12 hours in advance.
Or use store-bought cold brew concentrate (affiliate) that needs diluted 1:1 with water or milk.
INGREDIENTS
4 oz. unsweetened dairy-free milk
4 oz. cold brew coffee concentrate
1 tablespoon pumpkin puree
1 tablespoon maple syrup
1-2 dashes of pumpkin pie spice
dairy-free whipped cream or cold foam
4-6 ice cubes
DIRECTIONS
Combine pumpkin, syrup, and spice in your drinking glass.
Add dairy-free milk to the pumpkin, syrup, and spice. Stir together.
Add ice cubes to the glass.
Add the cold brew coffee.
Spray dairy-free whipped cream on the top (optional) or froth the whipped cream first to thin it out more like cold foam. OR spray new dairy-free cold foam on top.
Sprinkle the whip with a little more pumpkin pie spice (optional).
