Creamy Cauliflower Soup Dairy-Free
sneak three of them into this cauliflower soup!
Cauliflower, carrots, and onions totally undetected, BAM!
Some cauliflower soup recipes leave in chunks of veggies,
but with my family smooth and creamy is the way to go.
Not to mention,
this is a creamy soup WITHOUT milk or even dairy-free milk.
That means it's an easy reheat, and that's awesome.
Be sure to make a full batch so you have leftovers!
This is such an easy soup, too.
I can have it on the table in 30 minutes, huge mom win!
Top with optional dairy-free cheese and even cooked bacon crumbles.
CREAMY CAULIFLOWER SOUP
INGREDIENTS
1 tablespoon dairy-free butter
1 clove minced garlic
1 teaspoon nutmeg
4-6 cups chicken broth
1 head cauliflower chopped
1 large carrot cubed
⅓ cup onion chopped
salt to taste
DIRECTIONS
In a large pot, melt 1 tbs. dairy-free butter and then cook 1 clove garlic in that for about 30 seconds.
Cook 1 teaspoon nutmeg in the butter for another 30 seconds.
Add 4-6 cups broth broth to your pot and bring to a boil.
Place 1 head of chopped & cleaned cauliflower, 1 carrot sliced, and ⅓ cup chopped onion in the pot.
Lower heat to a simmer, and cook until the cauliflower is tender.
Move the chunks and some liquid to a blender to puree.
Then add puree back to the pot for a creamy, smooth soup.
Serve this dairy-free cauliflower soup hot with homemade bread.
