Spice Cake Dairy-Free Egg-Free

My family loves it as much as you do.
Now for those of you who didn't know about this recipe from way back in 2008...
this is the Milk Allergy Mom wacky cake gone spicy!
Use just simple ingredients from your kitchen.
So easy, so frugal, and very allergy friendly.
RECIPE HIGHLIGHTS
- no milk, no egg, no substitutes needed
- simple spices: pumpkin pie spice and cinnamon
- just one bowl prep
- store-bought dairy-free cream cheese makes it easy
- no pumpkin necessary
SPICE CAKE DAIRY & EGG FREE
Use 8x8 inch pan, 9x9 inch pan, or cupcake pan for 12
Double ingredients for 9x13" cake or double layer round cake
Oven 350
INGREDIENTS
1 and ½ cups flour
1 cup sugar
1 teaspoon baking soda
½ teaspoon salt
2-3 teaspoons of pumpkin spice
2-3 teaspoons of ground cinnamon
1 teaspoon vinegar
1 teaspoon vanilla
⅓ cup vegetable oil
1 cup cold water
DIRECTIONS
Preheat oven to 350.
Grease baking pan or use my favorite non-stick pans made in the USA.
Put all ingredients in a large mixing bowl, in no certain order.
Combine ingredients on low speed.
Then mix on low-medium speed for 2 minutes.
Pour smooth batter into baking pan.
Bake on 350 approximately 30 minutes in oven until done, when cake springs back to the touch or a toothpick comes out clean. Time varies depending on the pan you use.
Let cool before frosting.
SPICE CAKE CREAM CHEESE FROSTING
Frost with dairy-free cream cheese frosting.

FROSTING INGREDIENTS
2 tablespoons dairy-free margarine
½ container dairy-free cream cheese
2 cups powdered sugar
½ teaspoon vanilla

FROSTING INSTRUCTIONS
With electric mixer, cream together margarine and cream cheese.
Add vanilla.
Gradually add powdered sugar, scraping down the sides of the bowl as you go.
Mix until smooth.
Frost your spice cake when it's cooled completely.






Those look delish, Jamie! Now they just need to be made gluten free. 😉 I've "converted" similar recipes before, so it should be quite easy to do. After Thanksgiving of course.
