Roasted Sweet Potatoes Dairy-Free
These dairy-free roasted sweet potatoes require just a handful of ingredients and are very allergy-friendly.

Together, they make an easy oven dinner, and both are such allergy-friendly recipes.
One of my favorite meals when I'm in the mood to get back to the basics of whole foods.
I'm so glad our pastor's wife once made this for us, so we could share it with you.
She added the apples, and that certainly brought these sweet potatoes up a notch.
You can decide if you want to include apples or not.
The potatoes are delicious either way.
And I love that they can be roasted without butter, considering our dairy allergy.
I love making them with coconut oil, but olive oil will work, too.

ROASTED SWEET POTATOES RECIPE
INGREDIENTS
sweet potatoes (one per person)
apples (one half per person)
salt to taste
oil (olive oil or melted coconut oil)
cinnamon (optional)
DIRECTIONS
Peel and wash the sweet potatoes.
Dice the potatoes into small bite-size pieces.
Wash, peel, and dice apples into bite-size pieces (optional).
Place the sweet potatoes (and apples, if using) in a baking dish.
Toss in plenty of olive or coconut oil until all is coated.
Sprinkle with sea salt.
Sprinkle with cinnamon (optional).
Bake in the oven on 350 until tender, about 30-45 minutes.
Toss halfway through baking.
