Years ago, when we moved into our house, we were blessed with a beautiful apple tree right in the backyard.
And when the apple tree was producing, we had more apples than we knew what to do with.
That’s when I baked up apple recipes galore…dairy, egg, and nut free for our food allergies.
Apple bread was one of our favorites!
Now the apple tree is gone, but we definitely buy apples to keep making this bread.
It’s actually the perfect recipe for when apples are sitting around, not getting eaten.

APPLE BREAD RECIPE

MUFFINS OPTION
This recipe can be used for apple cinnamon muffins, as well.
Just put the batter into a muffin pan instead of a bread pan.
And baking takes half the time.
Check the muffins at 20 minutes.
If they don’t bounce back to the touch, keep checking in one minute increments until they are done.
INGREDIENTS
Dry Mixture
1 and 1/2 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
1 and 1/2 teaspoons baking powder
1/8 teaspoon salt
Wet Mixture
1/2 cup sugar
1 cup peeled, shredded apple
1/4 cup vegetable oil or melted coconut oil
1 egg or 3 tablespoons of applesauce
DIRECTIONS
Grease bread pan or use this non-stick bread pan.
Mix first set of dry mixture ingredients in a large bowl.
1 and 1/2 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
1 and 1/2 teaspoon baking powder
1/8 teaspoon salt
In a separate medium sized bowl, mix second set of wet mixture ingredients.
1/2 cup sugar
1 cup peeled, shredded apple
1/4 cup vegetable oil or melted coconut oil
1 egg or 3 tablespoons of applesauce
If the coconut oil hardens, heat the oil mixture until the coconut oil melts and the mixture is smooth.
Add the wet mixture into the large bowl of dry mixture.
Stir wet and dry mixtures together just until combined.
Spoon batter into a greased or non-stick bread pan.
Bake approximately 40-50 minutes or until wooden toothpick comes out clean from the center. Also make sure the center is firm to the touch.
Cool on a wire rack.
Store in airtight container.
The flavors meld together best on the second day…if you can wait that long.

Yum! I tried it with egg because I didn't have any applesauce on hand, and added some streussel topping I had left over from a previous recipe. Would make again.
