TOP TIP FOR COOKIE PIE
Try not to overbake your cookie pie or cake. First the edges brown, the middle loses it’s wet gloss, then keep a close eye on it from there. Pull it out of the oven before the center fully firms up. It will set more after it comes out.
As the story goes, my hubby used to agree to shop at the mall with his mom as a kid…
because he knew he’d get a fancy cookie as a treat.
Ha ha, smart kid. Whatever it takes, grandma. Genius bribe!
But now as a food allergy dad, hubby knows we can’t use that to bribe our own kids to shop with us.
However, that sure doesn’t mean we’re gonna miss out on those delicious cookie treats!
No way. It didn’t take me long to figure out how to reinvent this famous cookie fun without milk and egg.
Perfect for our family with food allergies.
And guests can’t even tell it’s allergy-friendly.
I think it’s even easier than making chocolate chip cookies, just press all the dough into a pan and bake.
If you don’t use icing, it’s even easier. Perhaps instead, serve it hot with dairy-free ice cream on top. Heavenly!
But if you do decide to decorate with icing, we know you won’t regret it. Just make sure it’s cooled first.
As a teenager, my kiddo now prefers this as his favorite birthday cake.
He even asks for this to be his allergy-friendly pie on Thanksgiving sometimes.

HOW TO DECORATE COOKIE PIES
Simply fill a freezer bag with your favorite allergy-free frosting.
Snip a corner of the bag.
Pipe icing onto your cooled giant cookie.

CHOCOLATE CHIP COOKIE PIE DAIRY & EGG FREE
Oven 350
Use a pie pan or large cast iron skillet.
Double ingredients for a 9×13″ cookie cake.
COOKIE PIE INGREDIENTS
1/2 cup dairy-free butter soft
1/2 cup packed brown sugar
1/2 teaspoon vanilla extract
1 egg or flax egg
1/4 teaspoon salt (1/2 tsp. if your dairy-free butter is unsalted)
1/2 teaspoon baking soda
1 cup flour
3/4 cup dairy-free chocolate chips
dairy-free frosting
HOW TO MAKE A COOKIE PIE
Set out your dairy-free butter to soften.
Mix your flax egg if not using real egg: 1 tbs. ground flax + 3 tbs. water.
In large mixing bowl, beat together until light and fluffy:
1/2 c. dairy-free butter (soft)
1/2 c. brown sugar
1/2 tsp. vanilla
Beat in 1 egg or 1 flax egg.
Mix in 1/4 tsp. salt (or 1/2 tsp. salt if using unsalted butter) and 1/2 tsp. baking soda.
Gradually add 1 c. flour just until fully mixed.
Fold in 3/4 c. of dairy-free chocolate chips.
Spread into an ungreased pan.
Bake at 350 degrees for 20-25 minutes until golden brown.
Cool cookie and decorate as desired.
Or eat it hot out of the oven without icing.
EXTRA COOKIE PIE TIPS
Bake time may vary depending on the pan you use or if you double the recipe.
Don’t overbake or it may be too dry.
It’ll set a little more while cooling, too.

Hi Jenny! We hear all the time that 1:1 gluten-free mixes work great in our recipes. So I'd try that!
