VANILLA FROSTING TREATS

Here are a few ways we like to enjoy homemade dairy-free vanilla icing:

VANILLA FROSTING RECIPE

This recipe is enough for 12 cupcakes or a 9x9" cake.

Double the recipe for 24 cupcakes or a double-layer cake.

INGREDIENTS

¼ cup dairy-free butter, softened
¼ cup shortening or solid coconut oil (or more dairy-free butter)
1 teaspoon pure vanilla extract
dash of salt
1 and ¾ cup of sifted powdered sugar
dairy-free milk, up to 6 teaspoons 

DIRECTIONS

Cream together room soft dairy-free butter and solid coconut oil or shortening or more dairy-free butter well with a mixer on high speed. 

Mix in the vanilla extract.

Mix in a dash of salt.

Slowly add sifted powdered sugar ¼ cup at a time, scraping down the sides as you go. 

Beat in dairy-free milk 1 teaspoon at a time until you reach desired consistency. 

Finish by beating on medium-high speed for 3 minutes until light and fluffy.

Frost your baked goods once they are cooled.

  1. Hi. How do you store leftover icing? Can a cake be frosted and then refrigerated a day ahead (to save time)? Thanks!

    1. Hi Joy! I keep it in the fridge a couple days for leftover icing. I do think you could frost and refrigerate for next day eating. Hope that helps!
