Granola Bites Dairy Egg Free

Granola bars can be tricky to make homemade but granola bites are the perfect solution!

Not only are these dairy-free, but they are also very allergy-friendly.

No egg, no nuts, no wheat, no soy.

Just simple healthy ingredients and no baking necessary!

When my kids were little, I dished these allergy-friendly granola bites out to all the neighbor kids, and they were completely devoured.

Afterwards, one of the moms down the street called me for the recipe because her daughter came home asking to make some more. 

Fast forward a decade, and in an unusual turn of events…

our city was hit with huge storms that rendered us without power for six long days in the middle of summer.

Knowing I couldn’t open the refrigerator in those first few days, these granola bites came to mind as something healthy we could whip up with pantry ingredients.

Let’s just say, I’ll never take electricity for granted again.

In normal everyday life, these granola bites makes for a quick, easy, dairy-free breakfast or snack.

After years and years, my kids never tire of them.

And now they make them for themselves!

Here’s the recipe.

GRANOLA BITES 

INGREDIENTS

1 cup quick oats 
1/2 cup peanut butter or alternative
1/2 cup honey
1 cup rice crispy cereal 
1/4 cup ground flaxseed
1/2 cup shredded coconut
1/2 cup mini chocolate chips
1 tsp vanilla

DIRECTIONS

Mix everything above in a medium bowl until thoroughly incorporated.

Let chill in the refrigerator for half an hour.

Once chilled, roll into balls.

I use my melon baller (affiliate) to just scoop out little balls.

If the scoop starts sticking, wet it under water and keep scooping. 

If the bites aren’t sticking together well enough, add more honey one teaspoon at a time until they do.

Store in an airtight container and keep refrigerated for up to one week.

Do you use sweetened or unsweetened coconut?

Hi Andrea, we've actually used both. The bites are definitely sweet enough without any coconut. So totally depends on your preference or whichever you have on hand. :) If you're trying to cut added sugar, unsweetened will be great.
