I’ve been an allergy mom long enough to remember when soy was the only dairy-free option at coffee drive throughs.
It was totally my idea to make mochas with almond or coconut milk.
Because desperate times called for desperate measures, and you better bet I figured out how to make my own dairy-free coffees at home. Here’s how!
I was a frazzled mama of two toddlers desperately needing an afternoon pick-me-up.
Allergy-friendly, tasty, easy.
And on the cheap was welcome, too.
With two in diapers, I losing sleep and my mind and all my money, ha ha.
No money for the coffee drive-through.
Plus, it was super hard to drag two babies out.
Securing two squirmy little boys into two car seats took even longer than the Starbucks line.
So I had to figure out how to make my favorite coffee at home for money and time’s sake.
Plus, I needed a dairy-free option and soy was not my favorite.
I could make my own mochas with almond or coconut milk, woohoo!
The trickiest part to making DIY lattes was making espresso.
I didn’t have space for fancy espresso machines.
Luckily, I found a quick and easy go-around…
making strong coffee concentrate with instant coffee.
And my dairy-free mocha lattes turned out amazing!
I craved them daily for a season, so thankfully I could control the calories.
A decade later, almond and coconut milk can be found at local coffee shops, and it’s easier for me to leave the house with big kids.
But I still opt for my simple instant coffee mocha latte on some days.
After all, this is an allergy-friendly, money-saving, and convenient little treat that’s still a gem.
