I don’t know if you’ve heard,
but our family has made roasted chicken for dinner a few times a month for many, many years.
And with our family of four, we always have enough chicken left for lunch or dinner the next day.
One of our favorite leftover chicken meals?
Easy quesadillas!
As in…cheesy quesadillas…that are dairy-free, of course.
Dairy-free quesadillas are made possible with dairy-free cheese shreds now on the market.
Yay for dairy-free cheese shreds!
Quesadillas make for such a quick and easy meal with leftover chicken.
We whip these up in about 15 minutes.
Great for sports nights, church nights, busy errand days.
Bonus? Kids love this finger food!
HOW TO MAKE DAIRY-FREE QUESADILLAS
Shred or dice leftover cooked chicken.
Season leftover diced or shredded cooked chicken with taco seasoning.
Place a tortilla in a skillet or on a griddle on stovetop medium heat.
Top with taco seasoned chicken and dairy-free cheese shreds in moderation.
Place another tortilla on top.
Cook both sides until tortillas are golden brown crispy and the inside is heated through.
Move cooked quesadilla to a cutting board and cut into 6 even triangles.
Continue cooking quesadillas hot and fresh for your family.
WHAT TO SERVE WITH QUESADILLAS
rice
black beans
refried beans
corn.
It doesn’t get any easier than this, folks!
