Chocolate Frosting Dairy-Free

Even though we can find store-bought icing that's dairy-free...
cake always tastes better when we use homemade frosting!
I recommend making your icing right when your cake has cooled, and frosting it soon after.
If you make your frosting ahead and refrigerate it, you may need to whip it again so I try to avoid this extra step.
If you opt to use solid coconut oil in this recipe, know that it can harden and melt easily.
The time of the year and temperature in my house make a difference in how my frosting turns out when I use coconut oil.
That's why the dairy-free milk measurement varies. Just gradually add it until you reach desired consistency.
I do like to use coconut oil, though, because I find that using all dairy-free butter leaves a funny aftertaste.
Overall, this frosting recipe is easy and so much better than store-bought.
Here it is!
CHOCOLATE FROSTING RECIPE
Frosts 12 cupcakes or an 8x8" cake.
Double recipe for 24 cupcakes or a 9x13 cake.
INGREDIENTS
¼ cup soft dairy-free butter
¼ cup solid coconut oil or shortening (or more dairy-free butter)
1 teaspoon pure vanilla extract
¼ cup cocoa powder (sifted)
1 and ½ cups of powdered sugar (sifted)
dairy-free milk, up to 6 teaspoons
dash of salt
DIRECTIONS
Cream together room temperature dairy-free butter and solid coconut oil or shortening or more dairy-free butter.
Beat in the sifted cocoa powder.
Beat in the vanilla extract.
Beat in a dash of salt.
Slowly add sifted powdered sugar ¼ cup at a time, scraping down the sides.
Beat in dairy-free milk 1 teaspoon at a time until you reach desired consistency.
Finish by beating on medium-high speed for 3 minutes until light and fluffy.
Frost your baked goods once they are cooled.
If it's warmer outside or in your home, you may want to store your frosted treats in the refrigerator like professional bakeries do when they use coconut oil.

I am making some cupcakes for my allergy kiddo to have on hand in the freezer for parties, etc. In the past I’ve just frozen them without icing. Could you ice them and then freeze? Or freeze individual bags of icing to put on individual cupcakes?
We do know some freeze them with frosting! But I haven't. Let us know!
