Garden Zucchini Cakes Dairy-Free Egg-Free

Hot, fried zucchini cakes right out of the skillet.

You won't even realize you're eating your vegetables.

And hopefully your kids won't, either!

When my garden was overflowing with zucchini, I looked up how to make zucchini cake fritters but kept coming up with recipes requiring egg and flour. 

So I decided to invent my own easy wheat-free and egg-free version, and they turned out great!

They turned out a bit like hashbrowns, which the whole family enjoyed.

Just 5 ingredients and done in minutes.

Easy Zucchini Cake Fritters

ZUCCHINI CAKE FRITTERS RECIPE

INGREDIENTS

cooking oil or dairy-free butter
1 cup of shredded zucchini
1 cup of crushed Crispix, Rice Chex, or Corn Chex
1 egg or flax egg
garlic salt to taste
onion powder to taste

DIRECTIONS

Shred one cup of cleaned zucchini.

Mix up one flax egg, if using it as an egg replacement. 

Heat skillet on medium heat with oil or butter.

Squeeze excess water out of zucchini in a clean towel. This is a must. 

Mix the zucchini, egg or flax egg, and cereal.

Use an ice cream scoop to place mounds of the mixture into the hot skillet.

Press down into patties with a spatula while they cook.

If using flax egg, let the patties set as much as possible before flipping.  They will be delicate.

Sprinkle both sides of each patty with garlic salt and onion powder while cooking.

Cook each side until CRISPY brown.

Best eaten hot out of the skillet.
