When I say casserole, allergy mama, what comes to mind?
Cream of mushroom soup?
Sour cream?
Shredded cheese?
Cream cheese?
Don’t kick me in the teeth, I’m a milk allergy mom, too.
And I feel your pain.
I know most of your traditional casserole recipes are out the window with dairy allergies.
I missed my old school casseroles, too.
But not anymore.
Because I have one casserole recipe in our dinner rotation now.
It replaces all those cheesy dishes, and it’s the only one we need.
Serious. You won’t miss cheesy, creamy casseroles anymore.
Instead, you’ll love how this dairy-free casserole is so light and basic.
No dairy coma afterwards, how nice is that?
This casserole recipe is simple to make.
And it will please and fill up your whole family.
Even if we could eat dairy again, this would still be my favorite casserole dish.

this sounds good, and I'm going to try but have you ever used shredded hash browns? - for some reason my grandson does not like tater tots but likes the shredded has browns. he's also allergic to beef so I'm going to use ground turkey.

This was good, but dry. It needs some kind of sauce--maybe tomato sauce.

That sounds like a good option! My kids like it as is, probably because they generally don't like food mixed together. lol. But they like this.
