It's kale season in our garden, and that means we are looking for more ways to enjoy this hardy veggie.
In the past, about the only way I could swallow down kale was blended into a smoothie.
You can't even taste in our green monster smoothie!
But this year the harvest is bountiful.
Then that reminded me of another way I enjoy kale, in the Kale Crunch Salad at Chick Fil A.
Perhaps we could find an easy way to make it at home?
We'd just need to add some cabbage and almonds (or a crunchy seed for those with nut allergies).
And figuring out the dressing recipe was also a must.
The fast food app shows that kale crunch salad ingredients include apple juice concentrate, maple syrup, apple cider vinegar, distilled vinegar, water, extra virgin olive oil, salt, mustard seed, white wine, salt, and eight other ingredients.
But surely we could simplify it. And that we did.
This easy homemade dressing takes just FIVE ingredients and is perfect with kale and cabbage salad with slivered almonds, sunflower seeds, or pumpkin seeds. Heck, I even skip the cabbage sometimes, too.
