Macaroni & Cheese Cups Dairy-Free


Dairy-free macaroni and cheese…that tastes good?

You bet! This is my kiddo’s favorite food, even though he has a milk allergy.

And here’s our favorite way to make it…and freeze some for later!

Years ago, I learned to make freezer lunches ahead of time from Money Saving Mom.

Such a great idea for busy moms with kiddos at home during the day. 

And when macaroni and cheese cups came up as our next assignment, I had to try! 

We had new milk-free cheese on the market so I knew I could do this.

Determined, I indeed whipped up a dairy-free version of these freezable mac and cheese cups.

They turned out amazing! 

In fact, our little freezable lunch cups were even featured on Daiya’s Facebook page. 

Dairy-free, freezable, kid-friendly mac and cheese. 

We highly recommend.

Here’s how we made it.


Because there was no easy, boxed macaroni and cheese that was dairy-free in 2012…

we originally made these mac & cheese cups from scratch. 

However, my son has now become obsessed with Daiya cheese. 

So he can make his own macaroni and cheese in a jiffy!

If you’re gluten-free, check out Daiya’s boxed macaroni and cheese with gluten-free noodles.

If you’re not gluten-free, it’s more economical to use your own noodles with Daiya’s cheese sauce packets.

We buy the cheese packets with three in a box. 

That way, kiddo is set for making his own macaroni and cheese several times. 

If he has leftovers, I’ll do this freezer cup trick so he can pop them out and heat them quickly when he’s more crunched for time.

Place 12 foil muffin liners in muffin tin and fill muffin liners with dairy-free mac & cheese.

Cover the muffin tin with wax paper.

Place muffin tin in the freezer.

Freeze until the cups are frozen through. 

Remove wax paper.

Put frozen servings into a freezer bag or plastic container and seal.

Mark the container with name of food and date. 

Keep frozen mac and cheese cups in the freezer, pulling them out as you need them. 


Remove the number of frozen mac and cheese cups you want from the freezer.

Pop the cheesy noodles out of the foil wrappers and into a microwavable bowl. 

IMPORTANT, don’t put foil wrappers in the microwave. 

Microwave the cheesy noodles in a bowl for one minute per muffin. 

Stir the hot mac and cheese in your bowl and enjoy!

If freezing for later, makes 12 macaroni and cheese cups.

1.5 cups of dry macaroni
1 tablespoon dairy-free butter
1.5 cups dairy-free milk
4-8 ounces dairy-free shredded cheese or cheese sauce
sea salt to taste
pepper to taste

Here is dairy-free butter we like.

Here are cheese shreds my kids like.

Here’s the cheese sauce, which is my kiddo’s favorite.


Cook pasta in a medium sauce pan, according to directions on the box.

When the pasta is cooked, drain it in a strainer. 

Pour 1.5 cups dairy-free milk in the empty sauce pan. 

Add 4-8 ounces of dairy-free cheese to the dairy-free milk. 

Add 1 tablespoon of dairy-free butter.

Whisk the dairy-free milk, cheese, and butter continuously until smooth and heated through.

Salt and pepper to taste.

Gently fold in the cooked, drained noodles.

Enjoy hot and fresh or freeze individual servings in a muffin tin.

Recipe is a little confusing. It says 1.5 cups dairy free milk, then in instructions, say heat 2 cups?

We are sorry Nicole, you are right. Mac n cheese in general is pretty flexible on ingredients and it looks like we made some adjustments to the original recipe. Oooooops! We'll get this fixed. In fact, kiddo has been making his own mac n cheese with dairy-free Daiya cheese sauce and that makes it so easy. Just noodles and the cheese sauce. And I'm sure it will freeze well for these cups, too. Can't beat two ingredients! Hope that helps.
