Strawberry Romaine Salad Dairy-Free
This strawberry romaine salad is the perfect simple dish for spring and summer.
We serve it to twenty people on Easter every year, and even the kids like it.
The homemade salad dressing is so easy and can be made dairy-free and egg-free.

I first enjoyed this salad at a church get together soon after hubby and I were married.
And I just had to ask for the recipe!
We adapted a couple things once we had kids and were managing food allergies.
But it's still very tasty and even our kids have enjoyed it over the years, as both little kids and teens.
Maybe they pick the onions out, though.
Now we've been making it for twenty-five years.
It's the perfect refreshing salad especially when strawberries are in season!
STRAWBERRY ROMAINE SALAD RECIPE
NOTES
SERVINGS: Makes about 12 servings, enough for our family get-togethers. You can halve the recipe for a family of 4-6.
DAIRY-FREE: To make this dairy-free, be sure to use your favorite plain dairy-free milk. Oat, almond, soy, coconut will all work.
EGG-FREE: To make this salad egg-free, be sure to use vegan mayonnaise without egg.
SERVING: This salad is best served immediately after assembling.
PREP: To make this ahead of time: prepare, store, and refrigerate dressing, lettuce, strawberries, and onions separately until ready to serve.
POPPY SEEDS: You can throw some poppy seeds into the dressing if you're not allergic to make it officially poppy seed dressing. I just know a lot of families with food allergies question poppy seeds so we leave them out.
INGREDIENTS
2 heads of romaine lettuce
¼ large red onion
2 pounds strawberries
¼ cup dairy-free milk
⅓ cup sugar
¾ cup mayo or vegan mayo
2 Tb vinegar
DIRECTIONS
Whisk together the dairy-free milk, sugar, mayo or vegan mayo, and vinegar until smooth and combined well.
Let the dressing sit in the refrigerator for at least an hour.
Wash romaine lettuce and cut into bite-size pieces.
Slice red onions into bite-size moon shapes.
Wash the strawberries and cut into fourths.
Store cut lettuce, onions, and strawberries in separate containers in the refrigerator until ready to assemble and serve the salad.
When ready to serve: toss greens, strawberries, and onions in the dressing.
Serve immediately.
