Homemade Thin Mint Cookies Dairy-Free

When I saw the copycat recipe for Thin Mint Girl Scout Cookies floating around the internet,

I couldn’t wait to make a dairy-free version.

With just 4 simple ingredients, how hard could it be?

While a few Girl Scout cookies have worked for us in the past,

I know there’s a lot of confusion about the two manufacturers and the safety for food allergies.

Whether you’re willing to try actual Thin Mints with dairy allergy is up to you,

but making them at home is uber-easy and quite fun, actually!

I didn’t tell hubby what these were supposed to be and after he tasted them,

he proclaimed they were delicious.

Kiddo, remembering the taste of real Thin Mints,

said they taste like the real thing.

As for me,

anything mint and chocolate is a winner in my book.

Five stars from the whole family!

These are so quick and easy that kids can help.

And no-bake with pantry ingredients is always fantabulous.

I feel like we are always on the same wavelength! Just this week I updated my old Thin Mint Cookie recipe from years ago. But it's not as easy as this - I love this idea! Must try soon.
