Plus, it’s allergy-friendly. Dairy-free, egg-free, and nut-free for our allergies. And grandpa, who has a wheat allergy, also enjoys it. 

It’s so good, in fact, that it’s a perfect meal to feed a crowd.

We’ve had it simmering in a slow cooker for Halloween, Super Bowl, and New Year parties. 

Guests always love it!

HOW TO MAKE VEGGIE SOUP FAST

  • have the ground meat already cooked and ready to go
  • use frozen carrots, peas, and corn
  • use your favorite store-bought beef broth

WHAT GROUND MEAT FOR VEGGIE SOUP

All of these have worked well in our veggie soup recipe.

We mostly use venison because our freezer is stocked.

  • ground beef
  • ground turkey
  • ground venison

HOW TO MAKE SCRATCH VEGETABLE SOUP

Here are a few ways to make our vegetable soup even tastier. 

HOMEMADE BROTH – This takes no extra time because we have it stocked in our freezer. Yes, it’s chicken and not beef. But it still makes delicious veggie soup, especially because it’s homemade. Homemade Broth

FRESH CUT VEGGIES – If you have fresh tomatoes, carrots, peas, or corn on hand, feel free to throw those in. We often have frozen garden tomatoes and corn on hand. And it’s easy to peal and dice fresh carrots. 

FRESH HERBS – I’ve started drying our own garden basil and love having it on hand for soups and cooking. 

WHAT TO SERVE WITH VEGGIE SOUP

Soup is always tasty with a side of bread. Here are some of our favorites.

VEGETABLE SOUP DAIRY-FREE

INGREDIENTS

4 cups of beef or chicken broth
1 small can of tomato sauce
1 14.5 ounce can of diced tomatoes
1 pound cooked ground beef, ground turkey, or ground venison
1 bag mixed frozen vegetables
4 peeled, washed, diced potatoes
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
salt to taste

DIRECTIONS

Cook your ground meat in a large pot. Drain the grease.

Add the rest of the ingredients to the pot. 

Simmer on medium heat until hot and potatoes are cooked through. 

Let simmer longer to let flavors meld together. 

Store leftovers in the refrigerator. 

The next day, the flavor will be even better!

I've gotten to where I just make my own broth from chicken bones and then freeze it.

Thanks for letting me know what you use, though. That will be very helpful if I need something in a pinch! :)

Oh, also... you asked about paint. I used WASHABLE tempura paint. I got it at Hobby Lobby. It was the first time we had used it. I don't know much about paints as I usually tend to stray away from paint. LOL!

ah yes. the mystery breakouts. we have those often. it is really confusing. my allergist wonders if there is some sort of mold or something that affects my son. we just had a wierd thing happen again in the allergy world.. here is my blog: mouseymom.blogspot.com
