Maple Coconut Ice Cream Dairy-Free

Making safe, homemade ice cream for my son with milk allergy and the whole family is one of my favorite things to do.

And it’s one of my fortes in the kitchen, along with soup and baking.

That’s because ice cream is so simple to make.

Yet, it makes for special memories my kids talk about all the time. 

We can all remember ice cream being part of our childhood.

And our kids deserve that, too, even with food allergies.

Though there are several dairy-free ice creams on the market these days…

making my own is less expensive.

And it’s definitely fun! 

I love experimenting with different flavors and creating treats the boys request.

Today, we have maple coconut ice cream for you.

Instead of using dairy-free milk like we usually do in our ice cream recipes, we use canned coconut milk.

It makes very creamy dairy-free ice cream.

The recipe is below!

MAPLE COCONUT ICE CREAM DAIRY FREE

Makes 4 Servings

INGREDIENTS

1 can coconut milk (full fat)
1/2 cup dairy-free milk
1/4 cup maple syrup
1/4 cup coconut sugar (or sugar)
1/2 tsp. vanilla
pinch of salt
sprinkles (optional)

Coconut Maple Ice Cream Dairy Free

DIRECTIONS

Whisk all the ingredients together (except sprinkles) in a large measuring cup or bowl.

Put mixture in the freezer for 15-30 minutes to get it really cold. (optional)

Remove mixture from freezer and pour the mixture into your ice cream maker.

Churn according to your machine directions. Ours takes about 30 minutes in our small gel machine.

Top with fun sprinkles (optional).

If you want the ice cream firmer for cones, cover container and put the ice cream in the freezer for another 15-30 minutes. (optional)

If you have any leftovers, freeze it for later. Put the leftover ice cream in your blender before serving in order to make it creamy again.

For the half a cup of dairy free milk can you just use more canned coconut milk?

My son has a milk allergy and I have been looking for a good ice cream recipe now that summer is rolling around! Sadly, he is also allergic to coconut- do you use the same measurements when you use soy creamer? Do you prefer to use a flavored creamer?
