When hubby plants our summer garden, he knows my top request is that he grows cucumbers.
Preferably, I like skinny cucumbers with thin skin that doesn’t need peeled.
But we also end up with some bigger cucumbers, all different kinds.
There are tons of varieties, who knew?
That’s ok. We eat them all.
The only problem is figuring out how to eat through them fast enough.
Yes, we give plenty away.
And the kids love them sliced up for lunch.
It’s one of the few raw veggies that doesn’t give my kiddo oral allergy syndrome.
My hubby is the only one in our family who likes cucumber and vinegar salad.
As for myself, I like a slice or two in my water.
But that still leaves tons of cucumbers to use up.
Hubs always grows a lot!
Then one day, at a church bridal shower, I fell in love with little mini cucumber sandwiches.
Our pastor’s wife made these little finger food appetizers on homemade bread along with dill dip and thin cucumber slices.
I found myself going back for another and another with no self-control.
Without knowing she’s the one who made them, I turned to her and raved about how good they were.
That’s when she told me they were so easy to make.
I took a few mental notes from her instructions and knew it would be the first thing I’d make when hubby’s cucumbers were ready to harvest.
And that I did.
HOW TO MAKE DILL DIP DAIRY-FREE & EGG-FREE
I remembered my friend said the dip was just cream cheese, mayonnaise, dill, and some garlic.
With dairy-free cream cheese and vegan mayonnaise, this could be made dairy and egg free easily!

WHAT CUCUMBERS ARE BEST FOR SANDWICHES
I do like these little finger sandwiches best with thin skinned cucumbers that I don’t have to peel.
But really, any cucumbers will do.
If you have big, plump cucumbers with thicker prickly skin, you can peel them and cut slices into fourths for this fun finger food.
Easy peasy.
WHAT BREAD FOR CUCUMBER FINGER SANDWICHES
When my pastor’s wife made these, she used homemade bread cut into small squares, about a half inch thick.
So I acquired a taste for homemade bread with these right out the gate.
Thankfully, I have an allergy-friendly Dutch oven bread recipe that works great for these!
And when we first made these cucumber finger sandwiches at home, I definitely made the homemade bread for them.
But the cucumbers were coming fast and furious so I didn’t always have 24 hours to whip up more bread.
That’s when we resorted to dairy-free crackers that worked great, too.
Turns out, you can even enjoy this dill dip and cucumbers even without bread or crackers.
The dip is just so good. Spread it right on your cucumber slices and enjoy.

I’m shocked by how easy this recipe is.
Once my pastor’s wife gave me the gist of the ingredients,
it took just a little tweaking to get the taste how we wanted it at our house.
My hubby raves about how delicious this is.
And we aren’t even typically dairy-free ourselves.
It’s our son who has milk allergy.
But seriously, the dairy-free version doesn’t even taste dairy-free once you add the spices.
That’s a win, much like our homemade ranch dip recipe.
Sadly, it’s taken me all these years to make my own dill dip.
But now we are on board, full speed ahead!
DILL DIP RECIPE DAIRY-FREE & EGG-FREE
INGREDIENTS
4 ounces dairy-free cream cheese
2 tablespoons vegan mayonnaise
1 teaspoon dried dill
1/4 teaspoon garlic salt
splash of lemon or lime juice
DIRECTIONS
In a medium bowl, mix all the ingredients together with a fork until smooth.
You may add extra spices to your preferred taste.
Store the dip in an airtight container in the refrigerator.

HOW TO MAKE CUCUMBER DILL DIP BITES
Make sure the ingredients are safe for your food allergies.
INGREDIENTS
dill dip (recipe above)
cucumber slices
bread or crackers (bread recipe above)
DIRECTIONS
If using bread, cut it into 2×2 inch cracker-size pieces about 1/2 inch thick. Or use crackers.
Spread allergy-friendly dill dip on the bread or crackers.
Top the dip with a thin slice of cucumber.
Enjoy open faced as an appetizer or bite size lunch.
