it’s not something food allergy families take for granted.

In fact, being able to make ANYTHING from a box with food allergies is actually a huge accomplishment.

Boxed Corn Bread Dairy & Egg Free

So years ago when I discovered Jiffy Corn Muffin Mix is milk-free,

I understandably did the happy dance.

Check labels, ingredients can change.

I know, it has a long ingredient list of which some moms may not approve.

That’s understandable.

We definitely don’t live on this stuff as I also love making cornbread from scratch.

But some days having the convenience of a box is handy.

Bonus?

I can buy Jiffy Corn Muffin Mix at Aldi for pennies.

And actually, my hubby loves Jiffy Corn Bread.

To make Jiffy Corn Muffin Mix dairy-free and egg-free,

use your favorite dairy-free milk and easy flax seed egg replacer.

Since the box recipe only calls for one egg, the replacer works well.

Even with a flaxseed egg replacer,

these turn out like normal cornbread.

You’ll be amazed!

Jiffy Corn Muffins are delicious paired with dairy-free chili.

This mix can also be used to make dairy-free & egg-free corn dog muffins!

Definitely give those a try.

Your kids will thank you.

I had called the contact number on the box a couple of years ago to make sure the product would be safe from cross contamination. The lady on the phone informed that while the cornbread mix itself is free of the top 8 allergens, there was a chance of cross contamination. The facility has either powdered milk or egg (I want to say it was powdered milk - sorry, it was a while ago) and since the powder is fine, there's a chance it can go up in the air and get in the cornbread mix.

Sad, because I love Jiffy cornbread. Now, to be fair, this was a couple of years ago. They may very well have changed their procedures. But if not, I wanted to have that little warning out there. If it has changed, please let me know. I'd love to bake this again for my family!

We've used almost all of their muffin mixes and they are delicious! We don't just use them for muffins, but pancakes and waffles too! I was out of rice milk one day when making blueberry muffins so I used some orange juice. They boys loved it and that's the only way they want to eat them now. I also keep some of their chocolate chocolate chip muffin mix on hand to make cupcakes for Dill to bring to school when someone has a birthday treat in class or if we go to a birthday party.
